These surfactants are derived from sorbitol, the sorbitan esters by esterification with fatty acids which imparts a distinct lipophilic character to them. They are used as W/O (water in oil) emulsifiers in the food and beverage, personal care, and pharmaceutical industry. The ethoxylated sorbitan esters (polysorbates) impart a more hydrophilic character to the molecules and so often the two are used in combination in W/O (water in oil) emulsions.
